
This July and August, The Peninsula London will welcome back Soleil by Claude, its laid-back rooftop bar and restaurant, with a host of enhanced offerings. From the Tuesday 14th July until Wednesday 2nd September guests can enjoy leisurely lunches, stylish sundowners and balmy dinners high above London’s skyline. A new menu for summer 2026 includes a light crudo selection, generous Mediterranean-inspired sharing dishes and playful cocktails.
Taking over the space of two-Michelin-starred Brooklands restaurant on the eighth-floor terrace, Soleil by Claude brings colour-drenched charm and bold flavours alongside panoramic views across Hyde Park and open-air seating.
Conceived by Chef Director Claude Bosi, he comments “The response to the pop-up’s first year was incredibly rewarding. Reopening it felt like a natural progression, an opportunity to build on that success, further evolve the concept, and create something even more memorable for our guests. It’s a project we’re very proud of, and we’re delighted to be welcoming people back.”
Described by Bosi as a ‘breath of summer’, the menu is infused with Southern European spirit, featuring delicious new dishes. Salads and raw plates include sea bass carpaccio with cucumber and fennel, Galicia beef carpaccio and carpaccio of summer tomato. Globe artichokes are served with anchovy dressing and lobster rolls with Koffman chips. Steamed John Dory, piccata style veal chop and lemony roast chicken is followed by Soleil’s ‘Tarte Tropezienne’, warm Madeleines and a roving ice cream trolley.
Following this pop-up, Brooklands by Claude Bosi, The Peninsula London’s two Michelin starred restaurant will reopen on 3rd September 2025 with a new Autumn menu.
