Trèsind Mumbai Introduces Chef’s Table: Exploring India

Mumbai, Mar 13th: Trèsind Mumbai, the iconic and celebrated modernist Indian restaurant, announces the launch of an all-new experiential format – Chef’s TableExploring India – an intimate, research-led 10-course tasting journey that celebrates India’s regional diversity, culinary philosophies, cultural festivals, and chef identities. The first edition debuts on 12th March in the restaurant’s Private Dining Room (PDR), setting the stage for an immersive dining narrative designed to push the boundaries of contemporary Indian cuisine. 

Conceptualised as more than just a tasting menu, Chef’s Table is a cultural storytelling platform. Every month, over a limited number of lunches and dinners, the restaurant transforms into a new culinary destination. Each edition delves deep into a specific cuisine – reinterpreting classics through a contemporary lens while also presenting original creations inspired by the region’s ingredients, traditions, and lived histories. 

A defining highlight of the format is Chef’s Dialogue Night,  a dedicated four-hands collaboration that moves beyond a traditional guest shift. It is envisioned as a culinary conversation, where the host chef and guest chef co-create and present a collaborative 10-course journey, celebrating their individual styles in dialogue with one another. 

The series opens with a Malvani exploration led by guest chef and Chaitanya owner Surekha Walke, followed by a Sindhi-inspired narrative curated by Chef Vicky Ratnani in the subsequent edition. Future editions will continue to spotlight the remarkable depth and diversity of India’s regional cuisines from the rustic, mountain-rooted flavours of the Himalayan belt and the vibrant, seafood-rich coastal traditions to the bold, lesser-explored tastes of the Northeast. The series will also traverse the refined royal heritage of Awadhi cuisine, the fiery and aromatic kitchens of Chettinad, the robust desert flavours of Rajasthan, the delicate, saffron-laced elegance of Kashmiri cuisine, and the lush, coconut-forward culinary traditions of South India, making Exploring India an ever-evolving gastronomic series that celebrates the richness and beauty of the country’s diverse culinary landscape. 

At the helm of this vision is Himanshu Saini, Corporate Chef of Trèsind and the force behind Trèsind Studio, widely regarded among the finest Indian fine-dining destinations globally. The Mumbai chapter is led by Sarfaraz Ahmed, Executive Chef at Trèsind Mumbai, who brings technical precision and regional sensitivity to the restaurant’s evolving narrative. 

Speaking on the launch, Chef Sarfaraz Ahmed said, “With Chef’s TableExploring India, we are building a living laboratory of ideas. This format gives us the freedom to experiment fearlessly to deconstruct memory, reinterpret tradition, and reassemble flavours in ways that feel both nostalgic and entirely new. The four-hands dialogue brings an added unpredictability; when two culinary minds come together, the outcome is layered, spontaneous and deeply experiential. We are excited for our guests to not just taste a region, but to feel immersed in it — and we believe that sense of discovery will stay with them long after the meal.” 

Chef Himanshu Saini added, “Indian cuisine is one of the most emotionally rich and technically diverse cuisines in the world. With Chef’s Dialogue Night, we are creating a platform where ideas can collide and evolve — two chefs, four hands, one unfolding narrative. It allows us to question, reinterpret and elevate regional India in ways that are progressive yet rooted. There is an element of anticipation in this format — for us as chefs and for our guests — because every edition will be different, and that creative tension is what makes it powerful. We are confident that diners will experience something truly transformative.” 

The Chef’s Table experience will be served exclusively: 

  • Thursday to Saturday 
  • Dinner only 
  • Limited seats per service in the Private PDR 
  • Reservations via District and Trèsind Mumbai
