The refreshed menu at Sian features a selection of premium seafood including lobster, octopus, scampi, squid, sea prawns, seabass, grouper and red snapper, where each dish is about fresh and sustainable ingredients. The masterchefs have curated an extensive array of dim sums and noodles, catering to both vegetarian and non-vegetarian palates.
A unique aspect of Sian’s dining experience is the customization of spice levels, allowing guests to tailor the heat level of their dishes to their preferences. The servers are trained to guide diners through the spice-level options, ensuring a personalized dining experience.

Saratchandra Banerji is a highly accomplished Executive Chef with over 20 years of experience, particularly with the Taj Group of Hotels. Renowned for his culinary expertise and leadership in the kitchen, he has consistently delivered exceptional dining experiences for a distinguished clientele, including dignitaries, celebrities and business leaders.
Throughout his career, Saratchandra has successfully led kitchen operations, menu planning, and team management across multiple Taj properties. He specializes in delivering customized cuisine for high-profile guests, including the President and Prime Minister of India, as well as renowned personalities such as Sachin Tendulkar and Ratan Tata. With mastery in a wide range of cuisines, including Indian, North Indian, Kerala, Chinese and Continental, he has established and managed profitable restaurants and contemporary kitchens, setting benchmarks in culinary standards.
Saratchandra’s achievements include receiving multiple awards for culinary excellence and guest satisfaction. He played an essential role in significant events such as the International Fleet Review by the Indian Navy in 2016, and was a recipient of the prestigious TABE (Taj Award for Business Excellence) for the best Coffee Shop and In-Room Dining.
He holds a Diploma in Hotel Management and Catering Technology from the Institute of Hotel Management and Catering Technology, Thiruvananthapuram.
